Good morning and happy Monday! Hope you all had a great weekend. My week is starting off well, since I’ve got my whole menu planned for the week and I won’t have to stress about dinner 🙂
Pizza is one of my kids’ favorite dinners, and if you can believe it, they actually like my homemade pizza better than take-out.
If you haven’t tried the easy E bread recipe from THM blogger Gwen’s Nest, you should! Although I’ve made it quite a bit in the past, I have been using other S pizza dough recipes, along with regular pizza dough for my kids, when I do pizza night.
This recipe is great because the dough uses regular wheat flour, but sits in the fridge for a week, during which the carbs in the flour are reduced…I’m not sure where they go, maybe the yeast feeds on them?…so that you have a low-glycemic bread dough that makes a great pizza. The recipe makes two crusts or one crust and one small loaf of bread, which is great for sandwiches or toast. Everyone in my family loves it!
I’m trying it again this week, making two pizzas this time, since my kids are eating so much more at meal time than they did a few years ago 🙂

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
