Menu Plan Monday

Good morning and happy Monday! Hope you all had a great weekend. My week is starting off well, since I’ve got my whole menu planned for the week and I won’t have to stress about dinner 🙂

Pizza is one of my kids’ favorite dinners, and if you can believe it, they actually like my homemade pizza better than take-out.

If you haven’t tried the easy E bread recipe from THM blogger Gwen’s Nest, you should! Although I’ve made it quite a bit in the past, I have been using other S pizza dough recipes, along with regular pizza dough for my kids, when I do pizza night.

This recipe is great because the dough uses regular wheat flour, but sits in the fridge for a week, during which the carbs in the flour are reduced…I’m not sure where they go, maybe the yeast feeds on them?…so that you have a low-glycemic bread dough that makes a great pizza. The recipe makes two crusts or one crust and one small loaf of bread, which is great for sandwiches or toast. Everyone in my family loves it!

I’m trying it again this week, making two pizzas this time, since my kids are eating so much more at meal time than they did a few years ago 🙂

    So glad you lost more weight this week! It’s also great you’ve found a bread recipe you like that is low carb. I know I think limiting bread would be the hardest thing for me on a low carb diet. I love to make bread there is just something therapeutic to me about kneading the bread, it gives me time to think.

      Thank you so much Shelly! I really love bread too, and although this recipe is low-carb, it tastes like regular bread. I have to limit myself to once a week though, but I don’t miss it as much as I did right at first.
