Happy Monday! I hope you all had a wonderful Mother’s Day! I spend my day with my family at home, playing baseball in the front yard, watching Star Wars, and eating some of my favorite…off-plan…foods.
I decided to go off-plan yesterday to enjoy some things that I haven’t eaten in quite a while…bagels from Panera, Mexican food for lunch and Chinese for dinner. They were all so yummy and it felt good to not have to cook 🙂
Unfortunately, I did feel pretty bloated and just blah overall at the end of the night. I know that the scale probably won’t show a loss today when I weigh-in, but I’m still going to concentrate on eating healthy this week, if only to feel better.
I think I’ve been sneaking in too many cheats each week, which is why I haven’t made much progress with my weight-loss lately. I tell myself that I’m OK to cheat this one time, as I’ve been good all week, but then the scale only shows a half-pound loss or even a gain. It’s time to get super serious again and power through the remaining 17 pounds that I have to lose to get into a healthy BMI range.
So I’ve picked some different recipes this week to get us out of our funk and introduce some new flavors. Most of the recipes this week come from two THM bloggers, Gwen’s Nest and Mrs. Criddle’s Kitchen. Although we love the THM cookbook, I’m hoping a change will help us get back on track (and I’m excited to try Gwen’s easy E bread recipe)!

Turkey Corn Chili (I’m taking out the corn to make it S), Gwen’s Fuel-Pull corn muffins, sour cream, cheese (S)
Beef Stroganoff, jasmine rice, asparagus (E)
Homemade pizza using Gwen’s bread recipe, salad (Crossover)
Spaghetti with Italian sausage (zucchini noodles for me and hubby), salad (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
