Menu Plan Monday

Good morning mommies! All ready for Monday? I’m still wishing that it was the weekend, but at least I have all my meals planned out for the week so that I have one less thing to worry about.

Get a jump start on your week by making a menu plan!

We have a few kids’ events to go to this week…always around dinner time…so I’m planning some easy to fix meals this week so that we can avoid eating take-out.

I bought some quick meal items at the grocery store this week to help make my life a bit easier. Take a look at what was on my shopping list:

As for my weight loss, I lost about half of a pound last week, which isn’t stellar, but at least the scale is moving in the right direction 🙂

Here’s what’s on the menu this week:

Eggs, berries (S)
Strawberry Big Boy Smoothie (FP)
Sprouted grain toast, cottage cheese, banana (E)
Scrambled Eggs with cheese, sausage, berries (S)

Leftovers most days
Light Progresso Soup, 2 Wasa crackers with light cheese (E)
Turkey and cheese sandwich on a low-carb pita, salad (S)

BBQ Meatballs, cauliflower rice, green beans (S)
Lasy Lasagna, broccoli (S)
Salmon burgers, salad (S)
BLT Fritatta, salad (S)
Salisbury Steak, broccoli (S)
Wicked White Chili, baked corn chips (E)
Eat out (S)

I’ve taken most of my dinners from the Trim Healthy Mama Cookbookblank (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

    What a great haul Erin. Did you know you can special order items at Trader Joe’s? At the TJ here you can order an item and when they come in they’ll let you know. I’ve had certain dairy free items brought into our local TJ and it’s really convenient. You might want to ask to see if the TJ in your area can do the same for you with the riced cauliflower.

    The BBQ meatballs sound good. We haven’t had them in a while, I need to make a batch for the freezer.

      I didn’t know that about Trader Joe’s! Thanks for the tip. I’m not sure that they will order the cauliflower for me, since the entire store was limited to one case per day, but there’s no harm in asking. I think it’s just so popular right now that they are having trouble keeping up with demand.

      Hi Pam! Thanks for stopping by today 🙂

      I’ve found THM to be very kid-friendly…our kids eat mostly the same foods that we eat, except that they drink milk and have lots of crossovers. Once in a while I have to fix them something separate from what my husband and I are eating, but it’s not that much more work 🙂
