Menu Plan Monday

Good Monday morning to you! After a nice long Spring break, the kids and I are ready to get back to our regular routines, which includes our weekly menu plan.

Get a jump start on your week by making a menu plan!

Vacations can be so difficult for people who are trying to lose weight, because we are always justifying eating unhealthy foods by telling ourselves that it’s a special time. I surprised myself by eating on-plan all week long, even when there were times that we were tempted to go out for a special treat.

I think it was easier for me this time because, as I mentioned in last week’s post, I ate terribly the previous week, indulging in lots of birthday cake and other off-plan foods. I ended up gaining 3 1/2 pounds from that birthday binge, so whenever I thought about eating off-plan last week, I remembered about the gain and it helped motivate me to stick to on-plan foods, which are delicious anyway!

A new feature to Menu Plan Monday

This week I decided to make a short video of my grocery hauls for you to be able to see what I buy at the grocery store each week to make my Trim Healthy Mama meals. There are a few off-plan items in my hauls, because my kids are not 100% on plan, as they are at healthy weights and are still growing.

Here’s what’s on the menu this week:

Breakfasts
Eggs, berries (S)
Strawberry Big Boy Smoothie (FP)
Bust-A-Myth banana cake (made with pumpkin instead), vanilla OIKOS Triple Zero yogurt, kiwi (E)
Scrambled Eggs with cheese, bacon, berries (S)

Lunches
Leftovers most days
Light Progresso Soup, 2 Wasa crackers with light cheese (E)
Tuna salad on pita, salad (S)

Dinners
Spaghetti (zucchini noodles for the adults), Italian sausage, salad (S)
Taco Chicken Bowls, jasmine rice (E)
THM pancakes, turkey bacon, berries (E)
Turkey Corn Chili, fuel-pull corn muffins (E)
Swedish Meatballs, broccoli (S)
Bratwurst and cabbage skillet, green beans (S)
Eat out

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

  1. Thanks for posting the tips & your menu for the week. I’m getting a bit overwhelmed & tired of cooking this way but decided I need to plan ahead better. I was on THM Facebook looking for ideas & your post fit the bill perfectly!

    1. Thanks Sandra! I forgot to make the cake earlier in the week, but I’ll definitely be making it for an after dinner treat tonight ๐Ÿ™‚

  2. How do you like the zucchini noodles? My hubby doesn’t like zucchini so I’m not sure he would eat them but my daughter and myself might.

    1. I think they are great…a nice, light side dish. I add a meaty pasta sauce to them, which makes them a bit heartier, and they make a great meal. The only downside is that they can be a bit watery, which then makes your sauce watery. I’ve tried pressing out the water with a spoon and a colander, but it’s hard to get all of it out without totally crushing the zucchini.

  3. I found you through OrgJunkie one week while skimming through her MPM link ups. What caught my eye was that you were doing THM. I recently bought both their plan book and cookbook and am still reading the book, so I haven’t actually started yet. Seeing your meal plan gives me a view of what kind of things I can eat and I’m always eager to read about other people’s journey on the THM plan. I need all the encouragement I can get. Thanks for putting yourself out there! I am looking forward to reading more on your journey. ๐Ÿ˜€

      Starting THM can be a little overwhelming because it’s such a different way of eating, not to mention the special ingredients, but once you learn the ropes, it’s easy. Have you joined the Facebook group yet? I’ve learned so many things from the ladies in there, and they are also so encouraging! If you search for TrimHealthyMamas, you should be able to find it.
