Menu Plan Monday

Good Monday morning! I hope you all had a wonderful Easter Sunday and are ready for a brand new week ๐Ÿ™‚

Get a jump start on your week by making a menu plan!

So I’ve got good news and bad news in the weight loss department this week. My husband and I are doing the Trim Healthy Mama weight loss plan, and so far, I’ve lost 32 out of the 50 pounds I needed to lose to get down to a healthy weight. Since Christmas, we’ve both been at a bit of a stall, as we’ve been allowing ourselves too many “cheat” foods each week.

Last Monday, I weighed in at the gym and found that I lost another 1.6 pounds, which is the good news. The bad news is that this weekend, I ate off plan about 80% of the time, including the delicious birthday cake which we had for my daughter. I’ve found in the past that just 2 days of eating off plan can erase a whole week’s worth of good eating.

So I’m not hopeful for a lower number on the scale this week. But today is a new day and I can start all over again on-plan. I’m ready to finally get out of this stall and lose these last 18 pounds once and for all!

Here’s what’s on the menu this week:

Breakfasts
Eggs, berries (S)
Strawberry Big Boy Smoothie (FP)
Sprouted Wheat English Muffin, cottage cheese, orange (E)
Scrambled Eggs with cheese, bacon, berries (S)

Lunches
Leftovers most days
Light Progresso Soup, 2 Wasa crackers with light cheese (E)
Tuna salad on pita, salad (S)

Dinners
Swedish Meatballs, cauliflower “rice” (S)
Leftover Tomato Chicken Bisque, quesadillas on low-carb tortillas (S)
Chicken Stir Fry, jasmine rice (E)
BLT Frittata, salad (S)
Taco Chicken Bowls, jasmine rice (E)
Ham, cauliflower “potato” salad, roasted asparagus (S)
Eat out

I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.

  1. I hope your daughter had a wonderful birthday! I typically gain weight around celebrations, too, but that’s okay.

    I’m sure any extra weight you put on will come right off once you get back on plan. ๐Ÿ™‚

  2. Yeah for all the weight loss you and your husband have experienced. I think it’s pretty normal to go through time when your weight stalls when you are dieting. I always look at it as an 80% on plan and 20% off plan and I’m doing good. Usually, you’ll still get results, they might be a little slower but it makes the process a little easier.

    The main thing is to stick with it and eventually you’ll make your goal. ๐Ÿ™‚
