Happy Monday to you all! I finally got some pumpkin last week and we’ve been enjoying some lovely pumpkin chocolate chip bread as a result of it 🙂
My next project is to come up with a truly delicious homemade pumpkin spice coffee creamer. I’ve enjoyed my homemade vanilla coffee creamer for a while, and now I’d like a pumpkin version. Problem is, most of the homemade recipes that I’ve tried leave you with a big glob of squash in the bottom of your cup, which is not fun. Hopefully I can get a formula all worked out this week!
In the meantime, we are still eating from the pantry this week, with the exception of a few dairy products and fresh fruit that I’ll pick up at Aldi this week. Here’s what’s for dinner at our place:
Monday: Mac and Cheesedog Casserole, veggies
Tuesday: BBQ Meatballs, rice, veggies
Wednesday: Lasagna, salad
Thursday: Teriyaki Noodle Bowls with chicken, veggies
Friday: Breakfast: eggs, sausage, pumpkin scones
Saturday: Eat Out
Sunday: Sloppy Joes, smiley face potatoes, veggies
