Happy Monday! After a week’s worth of snow-cation, I’m really hoping that things get back to normal around here this week!
The amount of snow that we got last week proved to be a bit overwhelming to our county, and it took them the better part of a week to get all the snow cleaned up. The kids stayed home from school all last week because the crews couldn’t get the snow plowed before Friday, although we were able to go out starting Tuesday and did our piano lesson and some shopping.
We slipped off our Trim Healthy Mama eating plan towards the end of last week, and ended up eating several meals off plan. But now that I’ve got a solid menu for the week (and was able to get to the grocery store), it should be easy to get back to normal.

Eggs with sausage (S)
Sprouted wheat toast with cottage cheese or egg whites and fruit (E)
Chocolate Banana Muffins, cottage cheese (E)
Oatmeal with Oikos 000 yogurt (E)

Tuna salad in a low-carb wrap (S)
Strawberry Big Boy Smoothie (FP)
Spaghetti with Italian Sausage, broccoli (my husband and I will try Better Than Noodles, the kids will have regular spaghetti) (S)
Taco Night with low-carb tortillas (S)
Chicken Stir Fry with brown rice (E)
Cheeseburger Pie, salad (S)
Pizza Night (low-carb pizza crust for my husband and me, regular crust for the kids) (S)
Tomato Chicken Bisque, salad (S)
