Happy Monday everyone! How many of you are buried under a few feet of snow this morning? Such a great way to start off a Monday morning, right? 😉
So I usually do my weekly grocery shopping on Saturdays, but since the big storm was on its way, I decided to go on Thursday, just to pick up a few things to get us through until early this week. The store was busier than I had ever seen it before, and there was only a few gallons of milk and loaves of bread left (neither of which I needed, thank goodness!).
Unfortunately, the snow was so big here that the county has told us that we might not get our streets plowed until Tuesday, so I won’t be able to get to the store until tomorrow or Wednesday. We do have food in the house, but our meals are going to look a bit different, since it will be an “eat from the pantry” kind of week.
We’re trying to stay as close to our Trim Healthy Mama way of eating as possible, since we don’t want to get too far off track…I’m hoping that I’ve hit the 30 pounds lost mark this week (I’ll weigh in when I can finally get to the gym).
Here’s what’s on the menu this week:
Eggs with sausage (S)
Sprouted wheat toast with cottage cheese or egg whites and fruit (E)
Oatmeal with Oikos 000 yogurt (E)
Leftovers most days
Tuna salad in a low-carb wrap (S)
Strawberry Big Boy Smoothie (FP)
Salisbury Steak, broccoli (S)
Chicken Chili in the slow cooker (E)
BLT Fritatta, berries (S)
Taco Night with low-carb tortillas (S)
Eat at birthday party
I’ve taken most of my dinners from the Trim Healthy Mama Cookbook (affiliate link). We’ve been using this cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
