Menu Plan Monday

Happy Monday! I hope you had a great weekend! We saw our first bit of snow yesterday…it was really just a dusting and melted almost as soon as it hit the ground, but it left some pretty white tips on the trees in the woods.

Get a jump start on your week by making a menu plan!

We’ll be celebrating our son’s birthday this week with a night out to dinner (his choice…it will probably be something like McDonald’s!) and a movie party over the weekend with all his buddies. I’m going to try to be disciplined around the cupcakes, since I’m still following Trim Healthy Mama, but one of them might make it onto my plate.

Speaking of Trim Healthy Mama, I lost another 1.5 pounds last week, bringing my total weight lost to just over 27 pounds. If losing weight is going on your list of New Year’s resolutions again in 2016, you might want to consider THM. Eggs with sausage (S)
Sprouted wheat toast with cottage cheese and fruit (E)
Oatmeal with Oikos 000 yogurt (E)

Leftovers most days
Tuna salad in a low-carb wrap (S)
Strawberry Big Boy Smoothie (FP)

Egg Roll in a Bowl, broccoli (S)
Beef Stew in the slow cooker (S), low-carb corn muffins (FP)
Lazy Lasagna, salad (S)
Chicken Parmesan, broccoli (S)
Sour Cream Beef Enchiladas, salad (S)
Eat out X 2

    I hope your son has a great birthday week, Erin! And definitely, go for that cupcake to celebrate. While I try to be “good” about what I eat most of the time, I always eat cake and ice cream for birthday celebrations, because I know my family wants me to. 🙂

      Thanks Sandra! Yes, it’s a good thing to indulge on special occasions…unfortunately, sometimes I don’t have a lot of self-control around things like cake! But I know that my husband will help me stay on track, and I’m so thankful for that 🙂
