Menu Plan Monday

Good morning and happy Monday! I hope you had a great weekend! I’m so happy to have all my dinners planned out for this busy week…one less thing to worry about in this busy holiday season 🙂

Get a jump start on your week by making a menu plan!

This weekend was a lot of fun, as I ran in my very first official 5K to support my daughter. At 9 years old, this was her second 5K (she’s way ahead of me!).

Although we had to get up extra early, had trouble finding parking, and endure cold temperatures, we had a great time together. It was wonderful to see the sense of accomplishment that all the girls had afterwards. My husband and I had to chuckle at how chatty and excited our girl was for a while after the race…guess it was the runner’s high kicking in 😉

We’re still chugging along on the Trim Healthy Mama plan. I didn’t lose any weight last week, but my husband lost 1 pound…unheard of at Thanksgiving, right? Hopefully the scale will show a loss this week 🙂

Here’s what’s on the menu this week:

Eggs with sausage (S)
Sprouted wheat toast with cottage cheese and fruit (E)
Oatmeal with Oikos 000 yogurt (E)

Leftovers most days
Tuna salad in a low-carb wrap

Spaghetti with Italian sausage (zucchini noodles for us, regular noodles for the kids) (S)
BLT Frittata, salad (S)
Taco Chicken, baked Tostitos, salad (E)
Pork Chops, mashed cauliflower, green beans (S)
Swedish Meatballs, zucchini noodles, egg noodles for the kids, veggies (S)
Eat at church
Eat out

    How great you ran your first 5K. I’m so not a runner, I think it’s my clumsy feet that can trip over nothing at all that keeps me from running. But I do love to swim and could do a 5K swimming. 🙂

    Glad to hear you held your own weight wise over Thanksgiving! Way to go Erin!

      That’s great Shelly! I am not really a swimmer…I don’t even like to sit in the water while my kids swim.

      I was pretty sore on Sunday, since I hadn’t really trained enough. I usually do spinning and step classes during the week, so my legs weren’t used to the running. I’m just glad I can say that I’ve finally done a 5K 🙂
