Menu Plan Monday

Good morning and happy Monday! Did you all have a good Thanksgiving? We had four lovely quiet days at home together and it was just so nice…nowhere to go and nothing to do was so nice for a change 😉

Not to say that we did nothing at all, quite the opposite. We raked up and bagged 29 bags of leaves (the last of them…thank goodness!), cleaned and decorated the house for Christmas, and decluttered the garage. And we ate lots and lots, of course!

Get a jump start on your week by making a menu plan!

Unfortunately, my Trim Healthy Mama Thanksgiving menu didn’t go so well. The stuffing was terrible and the gravy tasted funny. The cranberry sauce came out pretty well, although it didn’t gel up like the canned stuff (it does make a yummy jam on a sprouted wheat English muffin though!).

But I do have to say that this year was the first year that the turkey was absolutely perfect…moist breast and fully-cooked-through thigh meat. Usually, it seems that by the time the thigh meat is done, the breast meat has dried out, but not this time…yay! We had lots of nice leftover turkey to put into Turkey Corn Chili and for the Turkey Soup Kits that I’ll make this week for the freezer.

So even though my THM-ified Thanksgiving didn’t taste so good, I’m glad that we stuck with our plan and didn’t have any cheating, which is a huge miracle. I hope the scale reflects it later today at the gym 😉

Oatmeal with Oikos 000 yogurt (E)

Tuna salad in a low-carb wrap

Broccoli Cheese Soup, quesadillas (S)

Egg Roll in a Bowl, brown rice, broccoli (E)
Sloppy Joes, sweet potato fries (E)
Turkey Corn Chili, low-carb corn muffins (S)
Salisbury Steak, green beans (S)
Eat out

    Sorry to hear your gravy and stuffing didn’t turn out too good. But yeah the turkey was great.

    We had a great Thanksgiving too. My hubby had to work on Friday so no 4 day weekend for us but we did get the Christmas decorations up, made some progress on our bathroom remodel (we are ready to replace the pipes for the tub so we can install the new bathtub), and we built a new raised garden bed so I can move the strawberries later this week when it gets above freezing.

    It’s so great you were able to stick to your THM plan. I hope you have a great weigh in today!

    I’m sorry to hear that your THM Thanksgiving didn’t turn out so well, but the good news is that you probably didn’t gain all the weight that the rest of us did. 🙂

    I’m glad your turkey turned out well. Ours did, too, and most of our leftovers were gone in about two days.

      Glad your turkey was good too! I feel like I am finally a good cook, after 10 years of trying to make the perfect turkey!
