Happy Monday!
Fall seems to finally be in full swing around here. We spent many hours this weekend raking up the millions of leaves in our backyard, only to have a million more drop down in the wind yesterday. It pretty much looks like we didn’t even touch the yard at all!
But I’m so happy that we can finally have some warm, cozy dinners again. This week, I’m making some comforting foods like chili and a hearty pork roast, which will taste good on a chilly evening. We’re still doing Trim Healthy Mama, and I think we’re at 35 pounds lost between my husband and I….we are loving this way of eating (for real!).
Here’s what’s on our menu this week:
Breakfasts
Eggs with sausage
Chocolate Banana Muffins
Toast with cottage cheese and fruit
Oatmeal with berries and 000 yogurt
Pumpkin Baked Oatmeal
Lunches
Leftovers most days
Tuna salad in a low-carb wrap
Dinners
Pork Roast, mashed cauliflower, green beans
Chili, cheddar biscuits
Mexican Chicken in the crock pot, brown rice, zucchini
Bangin’ Ranch Drums (baked chicken drumsticks), broccoli
Taco Night (taco meat, low-carb tortillas, cheese, sour cream, lettuce, salsa)
Salisbury Steak, mashed cauliflower, green beans

It really is Sandra! I add some parmesan cheese to the mash, which makes it extra yummy 🙂
