Good morning! Happy Monday to you (if there is such a thing!) 😉 Time for a new menu for the week!
So, I’m thinking there must be a lot more people doing the Trim Healthy Mama plan than before, because for the second week in a row, there has been absolutely no frozen cauliflower in my local grocery store. The frozen veggies section has been pretty much bare, with no cauliflower at all.
Some of you may know that us THM-ers use cauliflower to make “faux-tatoes”…a yummy substitute for mashed potatoes. This week I’ve got mashed cauliflower on my menu twice, so I hope they reappear on the shelf today, or I’m going to have to try another store.
I’m also trying pizza for the first time this week (with cauliflower in the crust), and I hope it turns out well!
Here’s the rest of our menu plan for the week:
Breakfasts
Fried eggs, sausage, berries
Sprouted wheat toast, egg whites, fruit
THM pancakes
French Toast in a Bowl
Chocolate Banana Muffins
Lunches
Leftovers most days
Tuna salad in a low-carb wrap
Dinners
Trim Mac Salad (like a Big Mac, but in salad form!)
Cowboy Grub, green beans
Meatloaf, mashed cauliflower, broccoli
Tilapia Vera Cruz, brown rice
Fooled Ya Pizza with ham, salad
Lazy Lasagna, salad

Your menu looks yummy! I know occasionally the frozen veggies will be low around here. Could you use fresh cauliflower instead? I’ve seen on a cooking show how they used grated fresh cauiflower in place of rice. Hopefully they’ll have it back in stock soon.
