Good morning! It’s already the beginning of a new week…and it’s October! How did that happen so soon?
Have you got your menus all ready for the week? I made mine just yesterday, and regretted not doing it on Saturday. The grocery stores are super packed here on Sundays, and I got caught in a lot of shopping traffic!
Before I get to this week’s menu, I just wanted to quickly share with you the scope I did yesterday of my grocery haul. I’m participating in this month’s #PeriscopewithPurpose challenge, and am trying to scope once a day. My hair and make-up isn’t the best, as I had been out at church all morning, then out at the store for a while, but it just gives you a peek at what a typical week of menu planning and grocery shopping looks like for me.
We’re still going strong on the Trim Healthy Mama plan..both my husband and I have lost 7 pounds each, and we feel great. I tried making some on-plan brownies late last week, and while they were edible, they didn’t turn out at all like the photo…not sure what I did wrong there. The beef stew I made last Friday was absolutely delicious, although I did miss having a big piece of warm French bread to sop up all the gravy 😉
This week’s menu is full of new recipes from the Trim Healthy Mama cookbook…we’ve loved pretty much everything so far, and still have so many recipes to try out! Here’s what we’re having:
Scrambled eggs, berries with stevia
French Toast in a Bowl
Sprouted grain toast, egg whites, fruit
Oatmeal with berries
Bring on the Buttah Pancakes, bacon
Apple Crumble, cottage cheese
Leftovers most days
Waldorf Cottage Cheese salad
Slim Sloppy Joes, light coleslaw
Slow Fajitas, refried beans, brown rice
Reuben in a Bowl
Slow Cooker Pork Roast, mashed cauliflower, veggies
Lazy Lasagna, salad
Swedish Meatballs, zucchini (and noodles for the kids)
