Menu Plan Monday

Good Morning Moms! Hope you had a great weekend ๐Ÿ™‚

If you read last Monday’s post then you know that my husband and I started the Trim Healthy Mama (THM) plan last week. It’s been a bit of a struggle, but I’m happy to say that we both stuck with it throughout the week with no cheating, which is huge for us. We’ve started many “diet” plans in the past, only to cheat after a few days.

I don’t know how much weight I’ve lost yet, as I will weigh myself at the gym later today, but I can see a small difference already. My husband weighed himself on Tuesday, after only 2 days on the plan (they are having a weight loss contest at work), and found that he had already lost 2 pounds. He also went down one notch on his belt too!

MENU PLAN

The reason I think we’re having an easier time with THM is that we get to get pretty much everything and don’t have to count calories. There is no sugar and white flour products allowed, but we’ve done OK with stevia and sprouted bread. I’ve learned that mashed cauliflower is delicious in place of mashed potatoes, and being able to put butter on things is nice ๐Ÿ™‚

This week, I’m using the Drive-Thru Sue menu from the new Trim Healthy Mama book, (affiliate link) with a few changes here and there. I’ve ordered the THM baking mix, but it hasn’t arrived yet, so some of the yummy muffins will have to wait until next week. Here’s what’s on our menu this week:

Breakfasts:
Scrambled eggs with cheese, berries
Triple 0 yogurt, oatmeal, 1/2 orange
Fried egg and sausage patty with cheese, berries
Chocolate waffles with berries
Eggs with sausage
Strawberry Big Boy Smoothie
Blueberry muffin, 1/2 triple 0 yogurt

Lunches:
Low-carb pita with turkey, lettuce, mayo, cheese and Choco Chip Frap
Salad with steak
Leftover rotisserie chicken in a low-carb wrap
Turkey sandwich on sprouted bread, fruit
Waldorf cottage cheese salad
Leftovers
Eat Out

Dinners:
Salisbury Steak, mashed cauliflower, veggies with butter
Egg Roll in a Bowl, veggies
Rotisserie Chicken, buttered broccoli, side salad
Wicked White Chili, baked blue corn chips or leftover brown rice
Cheeseburger Pie, salad, green beans
Ridiculous Meatballs over spaghetti squash
Cowboy Grub, zucchini in tomato sauce

The recipes in this week’s menu can be found in the new Trim Healthy Mama Cookbook (affiliate link).

  1. Your menu looks great and it’s wonderful your husband is already seeing results.

I’ve always wanted to try cauliflower or mashed potatoes, but my son just can’t stand the flavor of cooked cauliflower. Maybe someday I’ll give it a try and see how it goes.

    1. It’s so easy to make Shelly, and my picky little boy even eats it! I just throw 2 bags of frozen cauliflower florets into a big pot to steam, then grind them up in the food processor with some cream, butter and salt. The texture is very close to mashed potatoes ๐Ÿ™‚

      I hope you’ll give it a try!

    2. Rachelle Fischer

Green Giant makes a cauliflower mash with cheese and bacon that I use as a drive thru Sue – my husband loves it and I just heat and eat.

      1. I’ve see that in the THM Facebook group! I really wish they had that in my area, but I haven’t seen it. Sounds like such a time-saver…I’m definitely a drive-thru Sue too ๐Ÿ™‚

        Have a great day Rachelle!
