Good morning all! How was your weekend? I hope it was a good one 😉
I spent most of last week recovering from ear and sinus infections, and I finally got around to feeling back to normal yesterday. I guess catching a cold right before our vacation and a week of bad sleep in a hotel, along with a lot of hiking and other activities, was too much for my immune system. Hopefully we will be free of illness for the fall!
So on last week’s menu, we tried out a new-to-us recipe for Fiesta Chicken and it was a big hit! I let it cook for a little less time than called for in the recipe (I usually find that meat gets over-cooked in most slow-cooker recipes), and it was very moist and creamy. We ate it over rice for dinner, then made chicken burritos out of the rest for lunches the rest of the week, since it made a lot!
This week, I’ll be using the slow cooker again to make pot roast, since I found one marked down to half price while doing my grocery shopping last weekend (I can’t bring myself to pay $21 for a pot roast at regular price!). I’m also going to use my oven again for a casserole, since it’s a bit cooler this week.
Here’s what’s on the menu at our house:
Monday: Sausage, Pasta, and Broccoli skillet meal, salad
Tuesday: Pot Roast in the slow cooker with carrots and potatoes
Wednesday: Southwestern Layered Beef Casserole, salad
Thursday: Meatball Subs, fruit salad
Friday: Breakfast for dinner–bacon, eggs, biscuits, fruit
Saturday: Lemon Pepper Chicken with orzo, veggies
Sunday: Eat Out

What’s on your menu this week?
We haven’t had beef pot roast in a while. I haven’t seen it on sale and can’t see spending so much on a piece of meat. We will be having breakfast for dinner twice this week and eating a few freezer meals too. I hope you have a great week.
I know how you feel…the price of a pot roast is absolutely crazy right now! Our store will mark them down about 50% when they are close to their expiration date, so if I see one, I will snap it up, since my husband loves pot roast.
