Good morning all! I hope you had a great weekend 🙂
We had a fabulous time on our vacation last week…we visited Stonewall Resort in Lewis County, WV. It’s such a beautiful area with lovely mountains. We enjoyed a family bike ride…during which we saw a group of about 9 deer crossing the road…boating, hiking, swimming, and even making s’mores at the resort’s fire pit.
One of the best parts was visiting the Falls of Hills Creek in the Monongahela National Forest. Although we misjudged the amount of time it would take to drive there, we just loved seeing this beautiful series of waterfalls and thought it was well worth the drive. Now that we’re home, there’s nothing more that we want than some good, home-cooked meals! So I’ve got some old favorites, as well as some new-to-us recipes on the menu this week, and no eating out 🙂
Here’s what’s on the menu at our house this week:
Monday: BBQ Meatballs, noodles, veggies
Tuesday: Fiesta Chicken, rice, chips and salsa
Wednesday: Homemade Pizza, salad
Thursday: Lemon Pepper Chicken Skillet Meal with Orzo, veggies
Friday: Breakfast for dinner–bacon, eggs, biscuits, fruit
Saturday: Spaghetti with Italian sausage, salad
Sunday: Marinated London Broil on the grill, baked potatoes, salad

Sounds like you had a great time. Your waterfall photo reminds me we haven’t driven out to look at the waterfalls here in the gorge in a long time. We’ve hiked to the top of a few of them before but my favorite thing to do is to go behind the waterfall at Multnomaf falls.

There is nothing like coming home from vacation and eating homemade food! Amazing how tired you can get of eating out. Your menu looks really good for this next week!
