Menu Plan Monday

It’s another busy week around here (when isn’t it? ha!), so I’ve planned some more easy meals to get dinner on the table in a hurry.

We still have a ton of leftovers from the pork shoulder roast I made in the crock pot last week, so I’m using that up in one of my favorite recipes, plus trying out some new sweet potato fries to add some extra veggies into dinner.

Here’s our menu for this week:

Monday: Penne, sausage and broccoli skillet dinner, green salad

Tuesday: Enchilada Casserole with leftover pork, green salad

Wednesday: Turkey burgers, sweet potato fries, fresh fruit

Thursday: Pork chops, mashed potatoes, corn

Friday: Breakfast

Saturday: Eat Out

Sunday: Pizza and wings for football 🙂

    Your menu looks really good again this week. We are having some easy meals this week too. I am making a shoulder roast in the crockpot today. I am hoping to shred it and make some BBQ shredded pork packages for the freezer.

      Last week was the first time I did a shoulder roast in the crock pot, and it turned out great! I might do it that way from now on 🙂

    Your menu looks wonderful! We actually have a quiet week (shh! don’t tell anyone!) at our house so I’m going to try and actually cook a bit more. It’s rainy and cold enough for chili today so that’s what I’m serving today. Still working on the rest of menu though.

      Thanks Jean! Oh, I am so jealous of you right now! I can’t wait to have a cold and rainy day here so that we can have soup or chili for dinner. Can you tell I’m sick of summer?

    I love that you post your meal plans every Monday. It’s a great inspiration for me. I am trying to find more crockpot meals I can use during those bus days.

      Thanks Wendy! It really helps me to stay accountable for making dinner every night.

      That recipe is from an old issue of Cook’s Country magazine. I don’t remember which one though 🙁
