Happy Monday! Spring weather has finally arrived for good (I hope!), and I’m excited to fill my weekly menu with some lighter meals 🙂
We enjoyed a delicious Easter dinner last night of ham, broccoli salad and deviled eggs, along with some Peanut Lovers Trimtastic cake.
And then this morning, we had leftover cake for breakfast. You can totally do that on Trim Healthy Mama! 😉
But we still have a ton of leftovers, so I’m planning to serve leftovers for dinner one night this week…and we’ll probably eat them for lunches too. I’ll be putting the leftover ham into a Trimmy Bisque…yum!

Tuscan Cream Chicken, broccoli (S)
Sloppy Joes (with sprouted bread for the kids), coleslaw (S)
Mother England’s Trimmy Bisque (using leftover Easter ham in place of chicken, which I think will make a crossover)
Taco Chicken Bowls with cauliflower rice (S)
Salisbury steak, green beans (S)
Homemade Pizza, salad (S)
I’ve taken most of my dinners from the Trim Healthy Mama Cookbook and the Trim Healthy Table cookbook (affiliate links). We’ve been using the THM cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
