When I was a kid, there was nothing better than going to the ice cream shop in the summer and getting a cone with rainbow sherbet ice cream. Instead of having to pick just one flavor, you could have several fruity favorites all in one cone…plus, it was pretty.

I’d like to recreate those summer memories with my own kids by making our very own homemade rainbow sherbet ice cream at home…and you can too. This method is so easy that you won’t mind making homemade rainbow sherbet ice cream for your family all summer long. And you won’t even need an ice cream maker to do it ๐Ÿ™‚

The ingredients are simple and are available at most grocery stores: Junket ice cream mix, whole or 2% milk, heavy whipping cream, and Jello flavors of your choice (I used Berry Blue, Orange, Raspberry and Lime). In a mixing bowl, combine the Junket Ice Cream Mix with the whole milk and heavy whipping cream and mix until fully combined. Pour the mixture into a bread loaf pan, or other small pan, and freeze until it is firm.
