When I was a kid, there was nothing better than going to the ice cream shop in the summer and getting a cone with rainbow sherbet ice cream. Instead of having to pick just one flavor, you could have several fruity favorites all in one cone…plus, it was pretty.
I’d like to recreate those summer memories with my own kids by making our very own homemade rainbow sherbet ice cream at home…and you can too. This method is so easy that you won’t mind making homemade rainbow sherbet ice cream for your family all summer long. And you won’t even need an ice cream maker to do it 🙂
The ingredients are simple and are available at most grocery stores: Junket ice cream mix, whole or 2% milk, heavy whipping cream, and Jello flavors of your choice (I used Berry Blue, Orange, Raspberry and Lime). If your store doesn’t carry Junket Ice Cream Mix, you can find it on Amazon (this is my affiliate link).
In a mixing bowl, combine the Junket Ice Cream Mix with the whole milk and heavy whipping cream and mix until fully combined. Pour the mixture into a bread loaf pan, or other small pan, and freeze until it is firm.
Using a butter knife carefully separate the cream into chunks, then put the chunks into a mixing bowl. Using an electric mixer, beat the chunks until smooth. Separate the vanilla ice cream into the four different bowls using a spatula.
To make the different flavors, put ½ – 1 tablespoon of the different Jell-O powder flavors in each bowl and gently mix with a spoon until fully combined. Try to do this as fast as possible to prevent melting.
When you are done mixing, place the 4 different ice cream flavors together into a container that can be sealed. Using the back of a spoon or your spatula, carefully connect the 4 different piles of ice cream so they freeze as 1 piece.
Freeze for another 1-2 hours to allow to set fully, then scoop into dishes or ice cream cones and enjoy!

Homemade Rainbow Sherbet Ice Cream
Ingredients
- Junket Ice Cream Mix 1 box
- 1 1/4 cups milk whole milk works best
- 3/4 cups heavy whipping cream
- Jello flavors of your choice I used Berry Blue, Orange, Raspberry and Lime
Instructions
- In a mixing bowl, combine the Junket Ice Cream Mix with the milk and heavy whipping cream. Mix until fully combined.
- Pour the mixture into a bread/loaf pan or small 9x5 pan and freeze until it is firm.
- Using a butter knife, carefully separate the cream into chunks, then put the chunks into a mixing bowl. With an electric mixer beat the chunks until smooth.
- Divide the vanilla ice cream evenly into four different bowls using a spatula. Put ½ - 1 tablespoon of the different Jell-O powder flavors in each bowl and gently mix with a spoon until fully combined. Try and do this as fast as possible to prevent melting
- Put the 4 different ice cream flavors together into a container that can be sealed. Using the back of a spoon or your spatula carefully connect the 4 different piles of ice cream so they freeze as 1 piece.
- Freeze for another 1-2 hours to allow to fully set.
- Enjoy!
This makes a special sweet treat to enjoy at barbecues or playdates, and is a big hit with kids and grown-ups alike! And nobody has to know that your homemade rainbow sherbet ice cream was so easy to make 🙂
