Now that it’s getting closer to Christmas, I’ve started thinking about ways in which I can show my love and appreciation to people in my life.  It doesn’t have to be a big, expensive gift, but just a little something that brightens up their days.

In the past, I’ve given my friends things like small candles, homemade gift tins with candies, small gift cards or Christmas cookies.  But this year, I wanted to change it up and make something out of the ordinary.

I’ve been baking up this old family recipe for years…my family loves it and it earns rave reviews from every potluck I’ve taken it to since I’ve been married. It’s a simple recipe to put together, and the longer it sits, the better it tastes.

This year, I decided to use this Chocolate Chip Oatmeal Cake recipe and turn it into mini cakes to give as gifts. Using the Sweet Creations Mini Loaf Pan from Good Cook, I was able to bake up 4 mini cakes at one time, making the whole process super easy!

After baking these cute little cakes, I let them cool, then wrapped them in the pretty holiday-themed parchment paper. Tied with some simple kitchen twine, these sweet little packages look like the perfect gift for your neighbors, teachers and friends.

Chocolate Chip Oatmeal Mini Cakes

  • 1 c. old-fashioned oats
  • 1 1/2 c. boiling water
  • 1 c. light brown sugar
  • 1 c. white sugar
  • 2 eggs
  • 1 t. baking soda
  • 1/2 t. salt
  • 1 1/2 c. flour
  • 2 T. cocoa powder
  • 1/2 c. oil
  • 1 12- ounce bag semi-sweet chocolate chips


  1. Preheat your oven to 350 degrees.
  2. Pour boiling water over oatmeal and allow it to set for 10 minutes.
  3. Mix sugars, eggs and oil together well, then add baking soda, flour, salt and cocoa powder, stirring well (mixture will be thick).
  4. Add oatmeal, stirring to combine, then stir in 1 c. chocolate chips.
  5. Pour the batter into greased and floured mini loaf pans, filling them about 2/3 full (you can also use a 9X13 pan). Sprinkle additional chocolate chips over the top of the batter, as desired.
  6. Bake the mini cakes for approximately 33-35 minutes. Let cool for 10 minutes before taking them out of the pan.
