Happy Monday! The weather is starting to feel like spring might finally be here to stay, so I’m excited to try some lighter meals on my menu plan this week.
I’ve also opted for some super easy dinners this week in order to save some time in the kitchen.
Dinnertime is going to be early all week long, since my husband is working nights this week, so I’ll be cooking at the same time the school bus gets home and homework time starts.
With the easy skillet dinners I’ve planned for the week, everything should go a bit smoother (plus, the kids will be happy to have some of their favorites!).

Here’s what’s on the menu this week:
Sprouted wheat pancakes, 1/2 banana, collagen coffee (E)
Fried eggs, sausage, berries (S)
Yuck Yum Bitty (E)
Scrambled Eggs with cheese, bacon, sauteed zucchini and mushrooms or spinach (S)
Leftovers most days
Big salad with tuna or cooked ground beef (S)
Sweetie on Steroids (E)
Taco Night (ground beef, cheese, sour cream, lettuce, salsa…and tortilla chips for the kids) (S)
Hubby Lovin’ Chicken, broccoli (S)
Cabb and Saus Skillet, deviled eggs (S)
Sweet and Sour Chicken, brown rice (E)
Homemade Pizza with Gwen’s crust, salad (XO)
Spaghetti with Italian sausage (spaghetti squash for me and hubby, pasta for the kids), salad (S)
