4 Weeks to Fill Your Freezer: Day 8

I tackled pizza pockets for today’s freezer challenge! These are going to be great to have in the freezer, especially for Sundays after church when I don’t feel like making anything 🙂


I started off by chopping all the veggies while the hamburger was browning. I had already put the ingredients for the dough into my bread machine earlier in the afternoon and was just waiting the last few minutes for the rise to finish.


This filling looks good enough to eat right out of the pan!  {I took a cue from Crystal and started listening to stuff on my phone while cooking…the kids were outside with Daddy and the neighbor kids, so I could actually listen to the program!  ;)}


When the dough was ready, I divided it up into pieces a little larger than an egg and rolled them out. I was pretty generous with the filling, as I had used the entire pound of hamburger, but only made a half-batch of dough. They were easy to seal up, but I rolled up the edges to be safe.


Here’s what they looked like after they came out of the oven. I underbaked them a bit, as the recipe suggested, so that they wouldn’t be too brown after reheating in the oven later.

See that gnarly looking pocket?  Well, after getting all the pockets filled, sealed and ready for the oven, I realized that I forgot to put the cheese inside, even though it had been sitting at my left hand the ENTIRE time!  I attempted to open one to see if I could put the cheese in and reseal it, but it didn’t work out.  We ended up eating that one with dinner.


I know that after this freezer cooking project is done, I will be so happy to be able to take time off from cooking now and then, but for today, after all the dishes I washed between the freezer cooking and dinner, I see why I don’t do this so often 😉

Tomorrow is Ham and Cheese pockets…my husband and daughter are looking forward to these!

    Those look and sound good! I’m patting you on the back because you’re so efficient & committed! I’m doing different recipes for the lunches this week and I wish I did these 🙂

      Awww, thanks 🙂 I’m so uncreative in the kitchen, so I’m happy that Crystal has it all planned out for us!

    Your pizza pockets look good. I forgot the cheese in one of mine and I also tried to open it and stuff the cheese in but it didn’t work our well either.

    They look fantastic!
    Cheese Tip: I sometimes put a light coat of egg white or water on them with a pastry brush and sprinkle with Parmesan cheese 😉
