Today was an easy freezer cooking day…I was able to put the Southwest Roll Ups together while tonight’s dinner was cooking. Talk about simple!
I had already planned on making chicken for dinner, so I went ahead and put a couple extra chicken breasts in the oven to cook while I prepped the other. After it was done cooking, I swapped out dishes and put tonight’s dinner in the oven.
I shredded the chicken with 2 forks, then added in the beans and salsa. I only had half a block of cheddar cheese left, so I mixed it with some mozzarella to put into the burritos.
Tomorrow we start on dinners! This is what I’ve been waiting for 🙂
