Happy Monday! Spring weather has finally arrived for good (I hope!), and I’m excited to fill my weekly menu with some lighter meals 🙂
We celebrated our daughter’s birthday this weekend with a party for her friends. We had 5 tweens here for a movie, craft and snacks.
Most of our Saturday was spent cleaning up the house and the yard and prepping food before the guests arrived. Some of the girls stayed a bit longer to make some more jewelry, so since it was so late, we ended up eating out.
And because I didn’t get my regular grocery shopping and menu planning done, we ended up eating out again on Sunday night too.
I usually try to limit our eating out, but it just couldn’t be helped this weekend.
I did manage to get a menu plan together last night and will do my shopping today. I’m excited about trying a new crock pot meal from Joy Filled Eats…a Mediterranean chicken that is super easy (just dumping all the ingredients into the pot and letting it cook).

Turkey or ham and cheese in low-carb wrap (S)
Pan-fried pork chops, broccoli salad (S)
Wet Burritos, salad (S)
Spaghetti(squash) with Italian sausage, green beans (S)
Crock Pot Mediterranean Chicken (S)
Waffles and Bacon (Crossover)
Eat Out 2 times (S)
I’ve taken most of my dinners from the Trim Healthy Mama Cookbook and the Food for Life Cookbook (affiliate links). We’ve been using the THM cookbook for practically all our meals for the past few months and we love everything we’ve tried so far.
